Iran has recorded more than sixty native pistachio cultivars, yet when you look at what actually travels in export containers, the list shrinks to four names. Each has its own shape, size range and typical buyer, and knowing the difference makes every quote easier to compare.
Two families: round and long
The simplest way to sort Iranian pistachios is by outline. Round nuts look a little like hazelnuts in their shell; long nuts are slimmer and closer to an almond in profile. Within each family there is a smaller and a larger variety, which is why the trade often talks about four shapes: Round, Jumbo, Long and Super Long.
Fandoghi: the everyday round nut
Fandoghi (sold as Round) is the most widely planted variety in Iran and the one shipped in the largest volumes. The nuts are compact, so a kilo holds more pieces than any other type, and the price per kilo is the most accessible of the four. The kernel has a purple-tinted skin and a classic pistachio flavour. Typical sizes run from 28–30 down to 34–36 nuts per ounce.
Best for: retail snack packs, private label, foodservice and anyone buying on price per kilo.
Kalleh Ghouchi: the big round nut
Kalleh Ghouchi (sold as Jumbo) keeps the round outline but is noticeably larger, with a generous kernel and a rich, buttery taste. Its size makes it a favourite for premium snacking and gift packs where the nut itself is on display. Typical sizes run from 16–18 to 24–26 nuts per ounce, and the kernel accounts for roughly 54% of the nut’s weight.
Best for: premium in-shell snacking, gift and festive packs.
Ahmad Aghaei: the long all-rounder
Ahmad Aghaei sits between Fandoghi and Akbari in size. It has a slim, elongated shape and a lighter, brighter shell than the other long type. Growers like it because it bears early and yields well, which keeps it competitively priced for a long nut. Common sizes are 26–28 and 28–30 nuts per ounce.
Best for: buyers who want the long look without the Akbari price.
Akbari: the premium long nut
Akbari (often traded as Super Long) is the longest and largest of the four, with a darker shell and a purple-skinned kernel. It needs more care in the orchard than any other variety, which is reflected in its price, and it is widely considered the most elegant pistachio on the market. Sizes usually range from 18–20 to 22–24 nuts per ounce, and the kernel makes up about 53% of the weight.
Best for: luxury retail, high-end gifting, and slicing into slivers where long kernels give the best cuts.

How to choose
Start with how the nut will be sold. If shoppers see the shell, shape and size matter most, and Jumbo or Akbari earn their premium. If the nuts end up in a mix, a bulk bin or a processing line, Round usually gives the best value. Then fix the size range, decide between naturally open and other shell types, and ask for a sample of the exact lot.
